For the next few days I am going to share a bunch of paleo vegetarian recipes I have come across. I will first focus on side dishes and then move on to some mains. Paleo is so ingrained with the protein + sides + fats mantra that it is very difficult to find easy to make vegetarian dishes. Even looking for basic vegetarian dishes was tough. Hopefully I can find and share enough of them. This recipes is for pan roasted carrots. It uses Balsamic vinegar which to me is Paleo.
PAN ROASTED CARROTS
500g Carrots (use different colored carrots if possible)
1 tablespoon Orange juice (optional)
1 tablespoon Balsamic vinegar (use more if you want a stronger flavor)
Salted grass-fed butter
2 sprigs fresh thyme
Peel and wash the carrots.
Cut them however you like. Keep them whole or cut them lengthwise like I do. It is up to you. You can also keep the tops on, though clean them thoroughly to avoid any bits of soil.
Put the carrots in a large pan and cover with water and the butter. At this point add the orange juice and some seasoning.
Bring the pain to a boil and cook until the water evaporates.
Eventually the butter will glaze the carrots.
Add the the thyme sprigs and any additional butter if you like.
Cook on low till the carrots are caramelized.
