There are two problems when cooking with chicken breasts. The first is that its low in fat, so it isn’t as naturally tasty as chicken thighs or drumsticks. The second is that it can become boring very quickly.
For me it gets boring because there is very little underlying flavour due to the lack of fat. You always need to do a lot more to make chicken breasts tasty compared to other proteins or other parts of the chicken. It is also very easy to get wrong, let it cook too long and and you can end up drying it out.
My solution is to vary my recipes as much as possible. I collect a load of paleo chicken recipes I think I might like, and then rotate them either weekly or twice weekly. Another trick is that if the recipe has a sauce, is to double it so you have extra. You can never have enough sauce 🙂
